If you've never had it, young, green jackfruit has a meaty texture and takes on the flavors of whatever it's cooked with. We marinate it in our shawarma spice mix (all spice, ginger, tumeric, cumin, cloves, etc.) with lemon and garlic and then roast it with a mix of shiitake and king mushrooms for an extra umami punch.
